One Week


One more week and then we are off to Ethiopia!!! I can hardly believe it. To keep ourselves busy we have been making baby food. When we first started this journey, JEP said that we HAVE to make our own baby food. I then noticed that my sister had the Super Baby Food book so I thought that we would give it a try. It's a breeze! So far we have made sweet potatoes, peas, broccoli, carrots and avocados and are stocking them away in our freezer. I plan to do a few more batches before we leave so we are stocked up for when we get home. Try it, you'll like it! Seven more days!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

WOW! I wish I had the time, energy, and drive to make my own baby food! That thought never even crossed my mind. I'm sure this week will drag on for you. Let the countdown begin!

I make all of Lidya's food. Her favorites: sweet potatoes, acorn squash, mango, apples, pears. Her least favorite: green beans. I wish I had a camera to record the look on her face when we tried those! She will eat peas, although she doesn't get as excited as with the orange ones.

I'd love to hear if you have suggestions on how to get protein into them. I'm trying to avoid meat for as long as possible.
